Method
Melt the white chocolate mixture
- Melt the white chocolate chips and unsalted butter together in the microwave in 30-second bursts, stirring between each, until smooth and glossy.
- Stir in the vanilla extract until fully combined.
Coat the cereal
- Pour the Rice Chex cereal into a large bowl and pour the melted white chocolate mixture over top, gently folding to coat every piece.
- Transfer the coated cereal to a large gallon-sized bag with the powdered sugar, seal, and shake until fully coated and dusty.
Sprinkle and set
- Spread the mixture onto a parchment-lined sheet pan and immediately sprinkle with red sprinkles and blue sprinkles while still tacky.
- Let set for 10 minutes before serving so the coating firms up.
Notes
Pro tip: Spread on the sheet pan right after coating so the sprinkles stick before the chocolate firms. Store in an airtight container at room temperature for up to 1 week; freezing is not recommended because the texture can soften. For a dairy-light option, use a dairy-free white chocolate baking bar and plant-based butter in the same amounts.
