Make the mascarpone cream
- Beat the heavy whipping cream with the granulated sugar and vanilla extract until stiff peaks form, then gently fold in the mascarpone until smooth and thick.
- Stop as soon as the mascarpone disappears to avoid overmixing and a grainy texture.
Assemble the tiramisu layers
- Quickly dip each ladyfinger into the cooled coffee, no more than 1–2 seconds per side, then arrange in a single layer in a dish.
- Spread half of the mascarpone mixture over the ladyfingers, then scatter half of the sliced strawberries and blueberries on top.
- Repeat with a second layer of coffee-dipped ladyfingers, the remaining mascarpone mixture, and the remaining strawberries and blueberries.
Chill and serve
- Dust the top with cocoa powder in an even, light layer.
- Refrigerate for at least 4 hours, or overnight, before serving for the best texture.
Notes
For clean, even layers, use a dish with straight sides and dip the ladyfingers in batches so they don’t get oversoaked. Refrigerate leftovers up to 3 days; freezing is not recommended because the berries and cream can soften when thawed. For a lighter option, swap part of the heavy cream with an equal amount of cold mascarpone-light style cream cheese spread (texture may be slightly softer).
