  • 3.5 lb chuck roast Use 3–4 lb; trim excess surface fat if very thick.
Vegetables
  • 4 carrots Cut into chunks.
  • 4 potatoes Halved small potatoes.
  • 1 onion Quartered.
Gravy & seasoning
  • 2 cup beef broth
  • 1 packet onion soup mix
  • 2 tbsp Worcestershire sauce
  • 3 garlic Minced cloves.
  • 1 salt and pepper To taste; season generously on the roast and lightly in the liquid if needed.

Method
 

Season and layer
  1. Season the chuck roast generously with salt and pepper and place it in the slow cooker.
  2. Arrange the carrots, potatoes, and onion around the roast.
Make the braising liquid
  1. Whisk together the beef broth, onion soup mix, Worcestershire sauce, and garlic, then pour over the roast and vegetables.
Slow cook until fork-tender
