Red White & Blue Marble Ice Cream

Red White & Blue Marble Ice Cream is a creamy no-churn vanilla base swirled with strawberry and blueberry puree ribbons. The marbled pattern comes from a few gentle knife swirls, then a long freeze until scoopable and firm.

Ingredients

Ice cream base
  • 2 cup heavy whipping cream Chill the cream for best volume before whipping.
  • 1 can (14 oz) sweetened condensed milk Use sweetened condensed milk for the no-churn set.
  • 1 tsp vanilla extract Add for vanilla flavor and aroma.
Berry puree ribbons
  • 0.5 cup strawberry puree Drizzle for red ribbon color; keep it smooth for clean swirls.
  • 0.5 cup blueberry puree Drizzle for blue ribbon color; swirl just a few times to keep marbling distinct.

Equipment

  • 1 stand mixer
  • 1 loaf pan

Method

Whip the vanilla base
  1. Beat the heavy whipping cream on high until stiff peaks form, about 3–4 minutes, and the mixture holds ridged lines when you lift the beaters. Stop as soon as it’s thick to avoid graininess.
  2. Gently fold in the sweetened condensed milk and vanilla extract until the mixture is fully combined and smooth, with no streaks remaining. Keep folding slowly so the whipped texture stays airy.
Swirl the red and blue ribbons
  1. Pour the mixture into a loaf pan and spread it evenly so the surface is level for cleaner marbling.
  2. Drizzle the strawberry puree over one half and the blueberry puree over the other half, using a light hand to create distinct ribbons.
  3. Use a knife to swirl the purees through the base in a marbled pattern, making only a few swirls. Avoid overmixing so the colors don’t fully blend.
Freeze until firm
  1. Cover and freeze for at least 6 hours, or until firm, before scooping. Let it sit 3–5 minutes at room temperature for easier scooping.

Notes

Pro tip: use cold heavy whipping cream and stop whipping right at stiff peaks so the base stays smooth. Store covered in the freezer for up to 2 weeks. Freeze yes—safest within 2 weeks for best texture. For a dairy-light option, use lactose-free heavy cream and lactose-free sweetened condensed milk (flavor and texture will be very similar).
