Lime dressing
  • 3 tbsp olive oil
  • 2 tbsp lime juice
  • 1 tbsp honey
  • 0.25 tsp flaky sea salt

Assemble the fruit
  1. Arrange the cubed watermelon and sliced peaches on a large serving platter so they sit in an even layer.
  2. Scatter the thinly sliced red onion evenly over the fruit for balanced flavor in every bite.
Make and dress
  1. Whisk the olive oil, lime juice, and honey together until glossy and smooth, then pour over the salad.
  2. Top with torn mint leaves and flaky sea salt, and add crumbled feta if using.

Notes

For the cleanest texture, slice peaches right before serving and keep the salad at cool room temperature until it hits the table. Store leftovers covered in the refrigerator up to 1 day; the watermelon will soften. Freezing isn’t recommended due to water content. For a dairy-free version, omit the feta (or replace with toasted chopped nuts for crunch).
