Method
Sauté the soup base
- Heat 2 tablespoons olive oil in a large pot over medium heat, then sauté the onion, carrots, and celery for 5 minutes until softened and glossy.
- Add the minced garlic and dried thyme and cook for 1 minute, stirring until fragrant.
Simmer the chicken
- Pour in 8 cups chicken broth, add the chicken breast, and simmer for 18 minutes until the chicken is cooked through.
- Remove the chicken from the pot, shred it, and return the shredded chicken to the broth.
Cook the orzo
- Stir in 1 cup orzo pasta and simmer for 8-9 minutes until tender, stirring occasionally to prevent sticking.
Finish with avgolemono or regular style
- For avgolemono style, whisk 2 eggs with the 1/3 cup fresh lemon juice; slowly ladle hot broth into the eggs while whisking, then stir the egg-lemon mixture back into the pot.
- For regular style, stir in the 1/3 cup fresh lemon juice and 2 tablespoons lemon zest directly into the simmering soup.
Season and serve
- Add the baby spinach and cook just until wilted, then stir in the chopped fresh dill.
- Season with salt and pepper to taste and serve hot.
Notes
Pro tip: If using avgolemono, keep whisking while tempering so the eggs don’t scramble—then stir back gently over low heat. Store leftovers in an airtight container in the fridge for up to 3 days; freeze only the soup without eggs if you want the best texture (up to 2 months). For a lighter swap, use reduced-sodium chicken broth and add an extra squeeze of lemon to keep the flavor bright.
