Ingredients

Garlic
  • 2 whole heads garlic peeled (about 20-24 cloves)
Chicken or vegetable broth
  • 4 cup chicken or vegetable broth
Water
  • 2 cup water
Crusty bread
  • 4 slices crusty bread toasted
Eggs
  • 4 eggs eggs poached in the simmering soup
Olive oil
  • 3 tbsp olive oil
Fresh thyme leaves
  • 1 tbsp fresh thyme leaves
Smoked paprika
  • 0.5 tsp smoked paprika
Cayenne
  • 0.25 tsp cayenne
Salt and pepper
  • 1 salt to taste
  • 1 black pepper to taste
Fresh parsley
  • 1 fresh parsley for garnish

Equipment

  • 1 large saucepan

Method

Cook the garlic base
  1. Heat olive oil in a large saucepan over medium-low heat, then gently cook the garlic cloves for 12-15 minutes until soft and golden but not brown. Keep the heat steady to prevent browning for a mellow flavor.
  2. Add smoked paprika and cayenne, then cook for 1 minute, stirring to toast the spices and deepen their aroma. The mixture should look fragrant and slightly darker, not burnt.
Simmer and blend
  1. Add chicken or vegetable broth and water, bring the soup to a boil, then simmer for 15 minutes. Bubble gently so the garlic continues to soften as the flavors mingle.
  2. Use an immersion blender to blend most of the garlic smooth, leaving a few cloves whole for texture. Blend carefully until the broth looks silky with visible bits of garlic.
  3. Season the soup with salt, black pepper, and fresh thyme leaves. Taste and adjust so the flavor is balanced and fragrant.
Poach eggs and serve
  1. Poach the eggs directly in the simmering soup for 3-4 minutes. Cook until the whites are set and the yolks are soft to your liking.
  2. Serve the soup with toasted crusty bread, a poached egg in the center of each bowl, and fresh parsley garnish. Finish with an extra crack of black pepper if desired.

Notes

Pro tip: keep the garlic at medium-low so it turns soft and golden without browning, which prevents bitter flavor. Store leftovers in the fridge up to 3 days; reheat gently, adding a splash of broth or water to loosen the texture. Freezing is not recommended because the blended garlic and poached eggs can change texture. For a dairy-free swap, use vegetable broth (as written) and keep toppings vegetarian.
