Prep and bake
- Preheat the oven to 350°F and pour the melted butter into a 9x13-inch baking dish.
- Toss the sliced peaches with 1/2 cup sugar and the lemon juice in a bowl, then set aside.
- Whisk together the flour, remaining 1/2 cup sugar, baking powder, and salt, then stir in the milk until just combined.
- Pour the batter over the melted butter in the baking dish—do not stir.
- Spoon the peaches and their juices evenly over the batter, so the batter rises up around the fruit as it bakes.
- Bake for 45–50 minutes, until the top is golden brown and set.
- Let cool for 15 minutes before serving warm.
Notes
For the cleanest texture, don’t overmix the batter—stop once the milk is incorporated so the topping stays tender. Store leftovers covered in the refrigerator up to 3 days; rewarm in the oven at 325°F until heated through. Freezing is not recommended because the peaches soften further after thawing. For a lighter option, use plant-based butter and a splash less sugar if your peaches are very sweet.
