Ingredients
  

Watermelon
  • 3 cup seedless watermelon Cubed into 1-inch pieces
Strawberries
  • 1.5 cup fresh strawberries hulled and sliced
Cucumber
  • 1 English cucumber halved and sliced
Mint
  • 0.25 cup fresh mint leaves torn
Lime dressing
  • 2 tbsp fresh lime juice
  • 1 tbsp honey
  • 0.25 tsp flaky sea salt
Feta (optional)
  • 2 oz crumbled feta cheese Optional
Optional variation
  • 0.125 tsp tajín or chili-lime seasoning Optional; add a pinch for a spicy-sweet twist

Method
 

Make the honey-lime dressing
  1. Whisk together fresh lime juice and honey in a small bowl until fully combined, with no honey streaks. Set aside at room temperature so it’s ready to drizzle.
Assemble the salad
  1. Combine the seedless watermelon, fresh strawberries, and English cucumber in a large serving bowl. Toss gently so the 1-inch pieces stay intact instead of getting mashed.
  2. Drizzle the honey-lime dressing over the top and toss lightly to coat. Taste and adjust with more lime juice or honey if needed.
  3. Scatter torn fresh mint leaves and flaky sea salt over the top. Add crumbled feta cheese if using.
Serve
  1. Serve immediately for best texture and maximum crunch. If you need to chill, refrigerate for up to 30 minutes, knowing the salad will release liquid as it sits.
  2. If using tajín or chili-lime seasoning, add a pinch over the finished salad right before serving. This gives a spicy-sweet kick without pulling too much moisture into the fruit.

Notes

Pro tip: keep dressing separate until right before serving to minimize watery pooling. Refrigerate leftovers in a sealed container for up to 24 hours; the fruit will release more liquid over time. Freezing isn’t recommended for cucumber-based salads. For a dairy-free swap, omit the feta cheese and add an extra pinch of sea salt to boost flavor balance.
