  • 3 cup cooked chicken diced
  • 0.5 cup mayonnaise
  • 0.25 cup celery diced
  • 0.25 cup red grapes halved
  • 2 tbsp pecans chopped
  • 1 tbsp lemon juice
  • 0.5 salt to taste
  • 0.5 black pepper to taste

  • 6 croissants sliced in half

Method
 

Make the chicken salad
  1. Combine the diced cooked chicken, mayonnaise, celery, red grapes, chopped pecans, and lemon juice in a large bowl. Stir until the chicken looks evenly coated.
  2. Season the mixture with salt and black pepper to taste, then stir again until well combined and glossy.
  3. Chill the chicken salad for at least 30 minutes in the refrigerator to let the flavors meld. Keep it covered so it stays fresh.
Assemble sandwiches
  1. Slice the croissants in half. Lay the halves cut-side up so they’re ready to fill.
  2. Scoop a generous portion of chicken salad onto the bottom half of each croissant. Spread gently to cover the surface for even filling.
  3. Top each sandwich with the other croissant half and serve immediately, or wrap for grab-and-go lunches. Keep any wrapped sandwiches chilled until serving.
