Make the chicken salad
- Combine the diced cooked chicken, mayonnaise, celery, red grapes, chopped pecans, and lemon juice in a large bowl. Stir until the chicken looks evenly coated.
- Season the mixture with salt and black pepper to taste, then stir again until well combined and glossy.
- Chill the chicken salad for at least 30 minutes in the refrigerator to let the flavors meld. Keep it covered so it stays fresh.
Assemble sandwiches
- Slice the croissants in half. Lay the halves cut-side up so they’re ready to fill.
- Scoop a generous portion of chicken salad onto the bottom half of each croissant. Spread gently to cover the surface for even filling.
- Top each sandwich with the other croissant half and serve immediately, or wrap for grab-and-go lunches. Keep any wrapped sandwiches chilled until serving.
Notes
Pro tip: dice the chicken small so the salad stays creamy and spoonable on the croissant. Refrigerate chicken salad in an airtight container for up to 3 days; assemble sandwiches just before eating for best flake. Freezing is not recommended because croissant texture and mayonnaise-based salad don’t hold up well.
