Ingredients

Chicken
  • 1.5 lb chicken breast Dice into bite-size pieces so it cooks quickly and evenly.
Vegetables & aromatics
  • 1 cauliflower Cut into florets for faster simmering and blender-friendly pieces.
  • 1 onion Dice finely for even sautéing.
  • 4 garlic Minced so it releases flavor during the short sauté.
Soup base & seasonings
  • 4 cup chicken broth Use hot or room-temperature broth to keep the timeline on track.
  • 1 cup heavy cream Stir in after blending so the soup stays silky.
  • 3 tbsp unsalted butter Used for sautéing onion and building flavor.
  • 1 cup shredded cheddar Shred for best melting.
  • 1 tsp garlic powder Adds mild, even garlic flavor.
  • 1 tsp smoked paprika Gives a warm, smoky color and flavor.
  • 0.25 salt and pepper Season to taste at the end.
  • 1 chives For serving garnish.

Equipment

  • 1 Dutch oven

Method

Sauté the aromatics and start the soup
  1. Melt the butter in a large pot over medium heat, then sauté the onion for 4 minutes until softened and lightly translucent.
  2. Add the minced garlic and cook for 1 minute, stirring constantly to prevent browning.
  3. Add the diced chicken and cook for 4-5 minutes, stirring, until the surface turns opaque.
  4. Pour in the chicken broth and add the cauliflower florets, garlic powder, and smoked paprika.
  5. Bring the soup to a boil, then reduce to a simmer and cook for 15-18 minutes until the cauliflower is very tender.
Blend, finish, and melt the cheddar
  1. Use an immersion blender to blend about half the soup, leaving some cauliflower chunks for texture.
  2. Stir in the heavy cream and return to a gentle simmer for 2-3 minutes, just until warmed through.
  3. Stir in the shredded cheddar until fully melted, then season with salt and pepper to taste.
Serve
  1. Ladle into bowls and top with extra cheddar and chives before serving.

Notes

For the creamiest texture, blend directly in the pot and stop once half is smooth; leaving chunks keeps it hearty. Refrigerate in an airtight container up to 3 days. Freezing is not recommended because cream soups can break when reheated. For a lighter option, swap heavy cream for evaporated milk while keeping the cheddar.
