Ingredients

  • 3 can (15 oz) butter beans (large lima beans)
ham, diced
  • 4 oz ham or smoked turkey
kale, chopped
  • 4 cup kale
onion, diced
  • 1 onion
garlic, minced
  • 4 garlic
celery, diced
  • 2 stalk celery
diced tomatoes
  • 1 can (14 oz) diced tomatoes
chicken or ham broth
  • 6 cup chicken or ham broth
smoked paprika
  • 1 tsp smoked paprika
dried thyme
  • 1 tsp dried thyme
red pepper flakes
  • 0.5 tsp red pepper flakes
olive oil
  • 1 tbsp olive oil plus extra for drizzling
fresh parsley
  • 0.25 cup fresh parsley chopped, for serving
salt and pepper to taste
  • 0.25 tsp salt to taste
  • 0.125 tsp black pepper to taste

Equipment

  • 1 Dutch oven

Method

Sauté aromatics
  1. Heat olive oil in a large pot over medium heat, then sauté onion and celery for 5 minutes, stirring occasionally until softened and slightly translucent. Keep the heat steady so the vegetables don’t brown.
Bloom spices
  1. Add garlic, smoked paprika, dried thyme, and red pepper flakes, then cook for 1-2 minutes while stirring until fragrant and darker at the edges. The aroma should turn smoky and warm.
Simmer the soup
  1. Add diced tomatoes, chicken or ham broth, butter beans, and diced ham, then bring the mixture to a boil. Watch for steady bubbling across the pot before reducing heat.
  2. Reduce to a simmer and cook for 15 minutes, stirring once or twice. Mash a quarter of the beans in the pot to thicken the broth while keeping some whole for texture.
Wilt kale and finish
  1. Add chopped kale and simmer for 5 minutes until wilted and bright green. Stir to submerge the kale so it softens evenly.
  2. Season with salt and black pepper to taste, then drizzle with olive oil and top with fresh parsley. Serve hot with the creamy beans and smoky broth clearly visible.

Notes

Pro tip: for a creamier texture without over-mashing, mash only about a quarter of the beans directly in the pot and leave the rest intact. Store leftovers in the refrigerator up to 4 days in a covered container; freeze up to 2 months (beans may soften further). For a lighter option, use smoked turkey instead of ham to reduce richness while keeping the smoky flavor.
