Marinate the chicken
- Combine browning sauce, all-purpose seasoning, garlic powder, onion powder, dried thyme, salt, and pepper with the chicken pieces, then cover and marinate for at least 2 hours or overnight in the refrigerator. Keep the chicken submerged in marinade where possible for even flavor (rest time 2 hours).
- Before cooking, let the marinated chicken sit at room temperature for 10 minutes while you prep the vegetables. This helps the chicken brown more evenly once it hits the hot oil.
Caramelize and brown
- Heat vegetable oil in a large skillet or Dutch oven over medium-high heat, then add sugar and stir until it caramelizes to golden brown. The oil should turn amber as the sugar melts (visual cue: golden caramel color).
- Add the marinated chicken pieces in a single layer and cook until deeply golden on all sides, then remove to a plate. Do not crowd the pan so you can get strong browning (visual cue: dark mahogany-gold surfaces).
Build the stew base
- In the same pan, sauté onion, green bell pepper, red bell pepper, garlic, green onions, and scotch bonnet for 4 minutes. Stir often until the vegetables soften slightly and become fragrant (visual cue: softened peppers and glossy onions).
Simmer until tender
- Return the browned chicken to the pan, add chicken broth, and bring everything to a boil. Stop when you see steady bubbling around the chicken (temperature cue: full boil).
- Reduce the heat to low, cover, and simmer for 35-40 minutes until the chicken is fall-apart tender and the gravy is thick. Check halfway through to keep it gently simmering (visual cue: thickened sauce that coats the spoon).
Serve
- Serve the brown stew chicken with rice and top with fresh thyme. Garnish right before serving for a bright, herbal finish (visual cue: flecks of green thyme on the mahogany gravy).
Notes
For the deepest mahogany color, caramelize the sugar until golden (not dark brown or it can turn bitter), then brown the chicken in batches if needed. Store leftovers in a sealed container in the refrigerator for up to 4 days; freeze in portions up to 3 months. For a lighter option, swap vegetable oil for 1 tbsp and add a splash more chicken broth to manage sticking during browning.
