Ingredients

White fish fillets
  • 4 white fish fillets (cod, halibut, or sea bass, 6 oz each)
Cherry tomato mixture
  • 2 cup cherry tomatoes, halved
  • 0.5 cup Kalamata olives, pitted and halved
  • 3 tbsp capers
  • 0.5 cup jarred roasted red peppers, sliced
  • 6 garlic, thinly sliced
  • 0.25 cup dry white wine or broth
  • 3 tbsp olive oil
  • 1 tsp dried oregano
  • 0.25 tsp red pepper flakes
  • 0.5 salt and pepper to taste
Serving
  • 1 Fresh parsley and lemon wedges for serving

Equipment

  • 1 sheet pan

Method

Prepare and roast the vegetable base
  1. Preheat the oven to 400F and grease a 9x13 baking dish.
  2. Combine cherry tomatoes, Kalamata olives, capers, roasted red peppers, garlic, white wine or broth, olive oil, dried oregano, and red pepper flakes in the baking dish.
  3. Roast the vegetable mixture at 400F for 10 minutes, until the tomatoes soften and the garlic smells fragrant.
Bake the fish
  1. Season the fish fillets with salt and pepper.
  2. Nestle the fish fillets into the roasted vegetable mixture.
  3. Bake at 400F for 12-15 minutes more, until the fish flakes easily with a fork and looks opaque throughout.
Finish and serve
  1. Garnish with fresh parsley and serve with lemon wedges.

Notes

For the juiciest fish, keep the fillets in a single layer so they cook evenly; if your fillets vary in thickness, check the thickest one first. Store leftovers in the refrigerator up to 3 days; reheat gently in a covered dish to avoid drying. Freezing is not recommended because white fish can soften when thawed. Dietary swap: use skin-on fish fillets and roast as directed for extra flavor without changing the recipe’s Mediterranean method.
