Ingredients

Bone-in chicken thighs
  • 2 lb bone-in chicken thighs
Vegetables aromatics
  • 4 carrots sliced
  • 4 celery sliced
  • 1 onion diced
  • 8 garlic minced
  • 2 tbsp fresh ginger grated
  • 2 cup kale or spinach chopped
Broth and seasonings
  • 8 cup chicken broth
  • 1 tsp turmeric
  • 1 tsp dried thyme
  • 0.25 tsp black pepper
  • 0.25 tsp cayenne
  • 1 tbsp lemon juice
  • 1 tbsp apple cider vinegar
  • 1 tbsp honey
  • 0.25 tsp salt to taste
Noodles and serving
  • 8 oz egg noodles
  • 0.25 fresh parsley for serving
  • 1 lemon wedges for serving

Equipment

  • 1 Dutch oven

Method

Build the soup
  1. Add the chicken thighs, carrots, celery, onion, garlic, ginger, chicken broth, turmeric, dried thyme, black pepper, and cayenne to a large pot. Bring to a boil over high heat, then reduce to a steady simmer.
  2. Simmer the soup for 30 minutes, until the chicken is very tender. Keep the liquid gently bubbling for an even cook.
Shred and finish
  1. Remove the chicken from the pot and place it on a plate to cool slightly. Shred the meat, discard bones and skin, then return the shredded chicken to the pot.
  2. Stir in the egg noodles and simmer for 6-8 minutes, until tender. Keep the broth at a gentle simmer to prevent overcooking.
  3. Add the kale or spinach and cook for 3 minutes, until wilted. Stir until the greens are evenly softened throughout the broth.
Season and serve
  1. Stir in the lemon juice, apple cider vinegar, and honey, then season with salt to taste. Taste and adjust salt as needed for a balanced, bright finish.
  2. Serve hot with extra lemon wedges and fresh parsley on top. Add the toppings right before eating for the freshest flavor.

Notes

For best texture, shred the chicken while it’s warm but cool enough to handle, then simmer gently after adding noodles so they don’t get mushy. Store leftovers in the refrigerator up to 4 days; reheat on the stove until hot. Freezing is not recommended because egg noodles can soften and change texture. For a gluten-free swap, use gluten-free egg noodles and follow package timing.
